Requirements: • Food hygiene / HACCP certificate • Able to identify primal cuts of beef, mutton and poultry • Clean, presentable and friendly at the counter The role involves: • Sharpen and hone knives on a steel and whetstone • Break down beef, mutton and chicken carcasses into primal cuts • Stuff and link fresh sausages with casings • Season and marinate meat on request 5+ years on the tools preferred. $3,600 per month, negotiable for the right hands.
