The role involves: • Sharpen and hone knives on a steel and whetstone • Debone shoulders, legs and loins with a boning knife • Vacuum-pack and wrap customer orders • Keep HACCP hygiene records and sanitise the block and tools • Dress the chilled counter and rotate stock by date • Portion steaks, chops and cutlets to the ordered weights You should have: • Able to use a band saw, grinder and sausage filler • Physically fit to lift carcasses and stand all day • Able to identify primal cuts of beef, mutton and poultry Freshers welcome — about 4 years of practice is enough.
