Requirements: • Familiar with deck, rack and convection ovens • Food handler / hygiene certificate Day to day you will laminate puff and croissant dough by folding in the butter; score the top of loaves before baking; proof and fry doughnuts, then glaze them; prove dough in the proofer at the right temperature and humidity; check finished products for colour, crumb and weight; load and unload the deck oven with a peel. 6+ years on the tools preferred.
