Requirements: • Familiar with North Indian, tandoor and continental cooking • Able to read and follow recipes and dockets • Good teamwork and clear communication under pressure The role involves prepare the mise en place before each service; knead dough and bake breads such as roti, naan and paratha; follow cleaning schedules and wash down work surfaces; marinate meats and prepare curries, gravies and bases; label and date all prepped ingredients in the walk-in.
