Day to day you will keep HACCP hygiene records and sanitise the block and tools; run the band saw to cut cleanly through bone; monitor chiller and freezer temperatures to keep the cold chain; break down beef, mutton and chicken carcasses into primal cuts; season and marinate meat on request; weigh, price and label cuts for the display case. You should have: • Able to use a band saw, grinder and sausage filler • Able to identify primal cuts of beef, mutton and poultry • 2+ years experience working as a butcher Full-time with occasional weekends.
