You should have: • Food hygiene / HACCP certificate • Comfortable working in cold rooms and chillers On a typical shift you will break down beef, mutton and chicken carcasses into primal cuts; sharpen and hone knives on a steel and whetstone; season and marinate meat on request; keep halal cuts separated and clearly handled.
