Ideal candidate: • Basic cake decorating and piping skills • Familiar with deck, rack and convection ovens • Accurate at weighing and following recipes On a typical shift you will knead and develop dough by hand and in the spiral mixer; pipe and fill cakes, pastries and cream rolls; roll out short-crust and biscuit dough; laminate puff and croissant dough by folding in the butter; load and unload the deck oven with a peel.
