The role involves: • Monitor chiller and freezer temperatures to keep the cold chain • Break down beef, mutton and chicken carcasses into primal cuts • Mince meat and prepare keema on the grinder • Debone shoulders, legs and loins with a boning knife • Trim fat, sinew and silver skin off the cuts • Stuff and link fresh sausages with casings Requirements: • Food hygiene / HACCP certificate • Quick and accurate on the weighing scales and order maths • Able to use a band saw, grinder and sausage filler Freshers welcome — about 1 years of practice is enough.
