Your main tasks: • Laminate puff and croissant dough by folding in the butter • Keep work surfaces and equipment clean to food-safety standards • Knead and develop dough by hand and in the spiral mixer • Monitor oven temperature and baking time for each batch • Weigh and mix flour, yeast, water and salt to the day's recipe • Proof and fry doughnuts, then glaze them You should have: • Accurate at weighing and following recipes • Able to stand for long hours in a hot kitchen • Familiar with deck, rack and convection ovens 3+ years on the tools preferred.
