Requirements: • Knowledge of dough fermentation and proving • Understanding of food-safety and HACCP basics On a typical shift you will roll out short-crust and biscuit dough; keep work surfaces and equipment clean to food-safety standards; rotate stock and follow FIFO on raw materials; grease and clean baking trays, tins and moulds; laminate puff and croissant dough by folding in the butter; load and unload the deck oven with a peel. 3+ years on the tools preferred.
