Great opportunity: we are hiring a sausage maker in Pamlico County, North Carolina. You will be based in a hotel or restaurant butchery. Day-to-day duties: • Weigh, price and label cuts for the display case • Dress the chilled counter and rotate stock by date • Portion steaks, chops and cutlets to the ordered weights • Sharpen and hone knives on a steel and whetstone • Take customer orders and advise on cuts and cooking You should have: • Able to identify primal cuts of beef, mutton and poultry • Clean, presentable and friendly at the counter • Able to use a band saw, grinder and sausage filler Six days a week, one day off.
