Great opportunity: we are hiring a butcher in San Diego County, California. You will be based in a hotel or restaurant butchery. Requirements: • Food hygiene / HACCP certificate • 2+ years experience working as a butcher • Able to use a band saw, grinder and sausage filler You will trim fat, sinew and silver skin off the cuts; keep HACCP hygiene records and sanitise the block and tools; vacuum-pack and wrap customer orders; season and marinate meat on request; weigh, price and label cuts for the display case; monitor chiller and freezer temperatures to keep the cold chain.
