Head butcher • Attala County, Mississippi

Urgent requirement: we are hiring a head butcher in Attala County, Mississippi. Day to day you will debone shoulders, legs and loins with a boning knife; season and marinate meat on request; trim fat, sinew and silver skin off the cuts; keep halal cuts separated and clearly handled; keep HACCP hygiene records and sanitise the block and tools; run the band saw to cut cleanly through bone. What we are looking for: • Able to identify primal cuts of beef, mutton and poultry • 2+ years experience working as a butcher • Clean, presentable and friendly at the counter We offer $5,400 per month plus benefits.
