Day to day you will hand-wash pots, pans and trays using the three-sink wash-rinse-sanitise method; clean, drain and descale the dish machine at the end of each shift; keep the dish pit tidy, dry and slip-free throughout service; wash chopping boards, knives and kitchen utensils; mop the floors and wipe down kitchen surfaces and splashbacks.
