Urgent requirement: we are hiring a trainee butcher in Kosciusko County, Indiana. You will be based in a hotel or restaurant butchery. The role involves weigh, price and label cuts for the display case; trim fat, sinew and silver skin off the cuts; sharpen and hone knives on a steel and whetstone; dress the chilled counter and rotate stock by date; portion steaks, chops and cutlets to the ordered weights; monitor chiller and freezer temperatures to keep the cold chain. Ideal candidate: • Quick and accurate on the weighing scales and order maths • Able to identify primal cuts of beef, mutton and poultry 2+ years on the tools preferred. $2,600 per month, negotiable for the right hands.
