Counter butcher — Corson County

Now hiring: we are hiring a counter butcher in Corson County, South Dakota. You will be based at a busy retail butcher's shop. Day to day you will sharpen and hone knives on a steel and whetstone; stuff and link fresh sausages with casings; keep HACCP hygiene records and sanitise the block and tools; trim fat, sinew and silver skin off the cuts; vacuum-pack and wrap customer orders; portion steaks, chops and cutlets to the ordered weights. You should have: • Food hygiene / HACCP certificate • Knowledge of halal slaughter and handling where required $2,800 per month, negotiable for the right hands. Overtime paid at a premium rate. Rotating shifts. Walk-in interviews this week.
