What we are looking for: • Understanding of food-safety and HACCP basics • Knowledge of dough fermentation and proving The role involves: • Rotate stock and follow FIFO on raw materials • Score the top of loaves before baking • Knead and develop dough by hand and in the spiral mixer • Pipe and fill cakes, pastries and cream rolls • Boil sugar syrup for glazes and icing Rotating shifts. $3,300 per month, negotiable for the right hands.
