Ideal candidate: • 2+ years experience working as a butcher • Clean, presentable and friendly at the counter • Food hygiene / HACCP certificate Day-to-day duties: • Sharpen and hone knives on a steel and whetstone • Vacuum-pack and wrap customer orders • Stuff and link fresh sausages with casings • Portion steaks, chops and cutlets to the ordered weights • Debone shoulders, legs and loins with a boning knife • Break down beef, mutton and chicken carcasses into primal cuts $3,600 per month, negotiable for the right hands.
