Meat trimmer wanted in Ottawa County

Immediate opening: we are hiring a meat trimmer in Ottawa County, Kansas. You will be based in a hotel or restaurant butchery. You will trim fat, sinew and silver skin off the cuts; keep HACCP hygiene records and sanitise the block and tools; debone shoulders, legs and loins with a boning knife; dress the chilled counter and rotate stock by date; sharpen and hone knives on a steel and whetstone; monitor chiller and freezer temperatures to keep the cold chain. What we are looking for: • Confident knife skills and safe blade handling • 2+ years experience working as a butcher • Able to identify primal cuts of beef, mutton and poultry Performance bonus on top of base pay.
