Ideal candidate: • Understanding of food-safety and HACCP basics • Knowledge of dough fermentation and proving • Accurate at weighing and following recipes On a typical shift you will load and unload the deck oven with a peel; rotate stock and follow FIFO on raw materials; weigh and mix flour, yeast, water and salt to the day's recipe; pipe and fill cakes, pastries and cream rolls.
