Urgent requirement: head butcher (Kentucky)

Now hiring: we are hiring a head butcher in Menifee County, Kentucky. On a typical shift you will break down beef, mutton and chicken carcasses into primal cuts; keep HACCP hygiene records and sanitise the block and tools; weigh, price and label cuts for the display case; monitor chiller and freezer temperatures to keep the cold chain; debone shoulders, legs and loins with a boning knife. You should have: • Able to identify primal cuts of beef, mutton and poultry • Quick and accurate on the weighing scales and order maths • Comfortable working in cold rooms and chillers 6+ years on the tools preferred.
