Urgent requirement: sausage maker (Indiana)

Now hiring: we are hiring a sausage maker in Benton County, Indiana. You will be based in a hotel or restaurant butchery. Day-to-day duties: • Run the band saw to cut cleanly through bone • Sharpen and hone knives on a steel and whetstone • Monitor chiller and freezer temperatures to keep the cold chain • Break down beef, mutton and chicken carcasses into primal cuts • Keep HACCP hygiene records and sanitise the block and tools • Take customer orders and advise on cuts and cooking You should have: • 2+ years experience working as a butcher • Confident knife skills and safe blade handling • Comfortable working in cold rooms and chillers Full-time, day shift.
