Requirements: • Quick and accurate on the weighing scales and order maths • Confident knife skills and safe blade handling Day-to-day duties: • Run the band saw to cut cleanly through bone • Season and marinate meat on request • Debone shoulders, legs and loins with a boning knife • Stuff and link fresh sausages with casings • Keep HACCP hygiene records and sanitise the block and tools • Portion steaks, chops and cutlets to the ordered weights Freshers welcome — about 5 years of practice is enough.
