Urgent requirement: we are hiring a bread baker in Idaho County, Idaho. You will work in a hotel pastry kitchen. What we are looking for: • Knowledge of dough fermentation and proving • Familiar with deck, rack and convection ovens The role involves: • Rotate stock and follow FIFO on raw materials • Shape loaves, rolls, baguettes and buns by hand • Score the top of loaves before baking • Knead and develop dough by hand and in the spiral mixer • Monitor oven temperature and baking time for each batch • Keep work surfaces and equipment clean to food-safety standards Six days a week, one day off.
