Urgent requirement: we are hiring a meat cutter in La Plata County, Colorado. Ideal candidate: • Able to identify primal cuts of beef, mutton and poultry • Knowledge of halal slaughter and handling where required The role involves sharpen and hone knives on a steel and whetstone; take customer orders and advise on cuts and cooking; stuff and link fresh sausages with casings; vacuum-pack and wrap customer orders; keep HACCP hygiene records and sanitise the block and tools; trim fat, sinew and silver skin off the cuts.
