Your main tasks: • Trim fat, sinew and silver skin off the cuts • Stuff and link fresh sausages with casings • Sharpen and hone knives on a steel and whetstone • Run the band saw to cut cleanly through bone • Break down beef, mutton and chicken carcasses into primal cuts What we are looking for: • Knowledge of halal slaughter and handling where required • Able to use a band saw, grinder and sausage filler • Confident knife skills and safe blade handling $5,300 per month, negotiable for the right hands.
