The role involves mince meat and prepare keema on the grinder; keep halal cuts separated and clearly handled; take customer orders and advise on cuts and cooking; monitor chiller and freezer temperatures to keep the cold chain; trim fat, sinew and silver skin off the cuts; sharpen and hone knives on a steel and whetstone.
