Immediate opening: we are hiring a retail butcher in Trempealeau County, Wisconsin. The job is at an abattoir or slaughterhouse. Day to day you will monitor chiller and freezer temperatures to keep the cold chain; debone shoulders, legs and loins with a boning knife; vacuum-pack and wrap customer orders; take customer orders and advise on cuts and cooking; dress the chilled counter and rotate stock by date; trim fat, sinew and silver skin off the cuts. You should have: • Able to identify primal cuts of beef, mutton and poultry • Knowledge of halal slaughter and handling where required 4+ years on the tools preferred.
