The role involves monitor oven temperature and baking time for each batch; roll out short-crust and biscuit dough; knead and develop dough by hand and in the spiral mixer; shape loaves, rolls, baguettes and buns by hand; load and unload the deck oven with a peel; keep work surfaces and equipment clean to food-safety standards.
