The role involves: • Check finished products for colour, crumb and weight • Load and unload the deck oven with a peel • Prove dough in the proofer at the right temperature and humidity • Score the top of loaves before baking Ideal candidate: • Able to stand for long hours in a hot kitchen • Knowledge of dough fermentation and proving Freshers welcome — about 2 years of practice is enough.
