You should have: • Food handler / hygiene certificate • Able to stand for long hours in a hot kitchen • Accurate at weighing and following recipes Day to day you will laminate puff and croissant dough by folding in the butter; weigh and mix flour, yeast, water and salt to the day's recipe; roll out short-crust and biscuit dough; load and unload the deck oven with a peel; decorate cakes with icing, fondant and fresh cream.
