Great opportunity: we are hiring a confectioner in Hughes County, Oklahoma. You will be based at a café with an on-site bakery. You should have: • Knowledge of dough fermentation and proving • Basic cake decorating and piping skills The role involves shape loaves, rolls, baguettes and buns by hand; rotate stock and follow FIFO on raw materials; weigh and mix flour, yeast, water and salt to the day's recipe; laminate puff and croissant dough by folding in the butter; check finished products for colour, crumb and weight.
