Now hiring: we are hiring a counter butcher in Petersburg Borough, Alaska. You will work at a halal meat counter. Requirements: • Physically fit to lift carcasses and stand all day • Able to use a band saw, grinder and sausage filler • Quick and accurate on the weighing scales and order maths Day to day you will debone shoulders, legs and loins with a boning knife; monitor chiller and freezer temperatures to keep the cold chain; break down beef, mutton and chicken carcasses into primal cuts; portion steaks, chops and cutlets to the ordered weights; take customer orders and advise on cuts and cooking; run the band saw to cut cleanly through bone.
