Immediate opening: we are hiring a sausage maker in Monterey County, California. You will be based in a hotel or restaurant butchery. Your main tasks: • Monitor chiller and freezer temperatures to keep the cold chain • Stuff and link fresh sausages with casings • Sharpen and hone knives on a steel and whetstone • Portion steaks, chops and cutlets to the ordered weights • Run the band saw to cut cleanly through bone • Weigh, price and label cuts for the display case You should have: • 2+ years experience working as a butcher • Knowledge of halal slaughter and handling where required $3,100 per month, negotiable for the right hands.
