Day to day you will prepare the mise en place before each service; manage the tandoor and skewer kebabs; check deliveries and rotate stock using FIFO; monitor food temperatures and run regular HACCP checks; chop, dice and portion vegetables, fish and meat; follow cleaning schedules and wash down work surfaces.
