You should have: • Confident knife skills and safe blade handling • Quick and accurate on the weighing scales and order maths • Physically fit to lift carcasses and stand all day Your main tasks: • Keep HACCP hygiene records and sanitise the block and tools • Trim fat, sinew and silver skin off the cuts • Sharpen and hone knives on a steel and whetstone • Portion steaks, chops and cutlets to the ordered weights • Keep halal cuts separated and clearly handled 3+ years on the tools preferred.
