The role involves: • Weigh, price and label cuts for the display case • Sharpen and hone knives on a steel and whetstone • Trim fat, sinew and silver skin off the cuts • Portion steaks, chops and cutlets to the ordered weights You should have: • Knowledge of halal slaughter and handling where required • Physically fit to lift carcasses and stand all day • Quick and accurate on the weighing scales and order maths Freshers welcome — about 4 years of practice is enough.
