Requirements: • Able to identify primal cuts of beef, mutton and poultry • Physically fit to lift carcasses and stand all day Day to day you will monitor chiller and freezer temperatures to keep the cold chain; weigh, price and label cuts for the display case; break down beef, mutton and chicken carcasses into primal cuts; portion steaks, chops and cutlets to the ordered weights; keep halal cuts separated and clearly handled. 5+ years on the tools preferred.
