You should have: • Understanding of food-safety and HACCP basics • Basic cake decorating and piping skills You will prove dough in the proofer at the right temperature and humidity; weigh and mix flour, yeast, water and salt to the day's recipe; knead and develop dough by hand and in the spiral mixer; load and unload the deck oven with a peel.
