You will dress the chilled counter and rotate stock by date; stuff and link fresh sausages with casings; trim fat, sinew and silver skin off the cuts; weigh, price and label cuts for the display case; break down beef, mutton and chicken carcasses into primal cuts; keep halal cuts separated and clearly handled.
