Join our team: we are hiring a sausage maker in Hickman County, Kentucky. You will work at an abattoir or slaughterhouse. Ideal candidate: • Quick and accurate on the weighing scales and order maths • Able to use a band saw, grinder and sausage filler • Clean, presentable and friendly at the counter On a typical shift you will trim fat, sinew and silver skin off the cuts; keep HACCP hygiene records and sanitise the block and tools; debone shoulders, legs and loins with a boning knife; season and marinate meat on request; dress the chilled counter and rotate stock by date; monitor chiller and freezer temperatures to keep the cold chain.
