Urgent requirement: retail butcher (Colorado)

We are recruiting: we are hiring a retail butcher in Las Animas County, Colorado. You will be based at an abattoir or slaughterhouse. You should have: • 2+ years experience working as a butcher • Able to identify primal cuts of beef, mutton and poultry On the job you will handle: • Portion steaks, chops and cutlets to the ordered weights • Break down beef, mutton and chicken carcasses into primal cuts • Season and marinate meat on request • Trim fat, sinew and silver skin off the cuts • Stuff and link fresh sausages with casings 5+ years on the tools preferred.
