Requirements: • Comfortable working in cold rooms and chillers • Able to identify primal cuts of beef, mutton and poultry The role involves monitor chiller and freezer temperatures to keep the cold chain; stuff and link fresh sausages with casings; trim fat, sinew and silver skin off the cuts; sharpen and hone knives on a steel and whetstone; dress the chilled counter and rotate stock by date.
