Butcher — City of Lexington

Immediate opening: we are hiring a butcher in City of Lexington, Virginia. You will be based in a hotel or restaurant butchery. Day to day you will weigh, price and label cuts for the display case; dress the chilled counter and rotate stock by date; run the band saw to cut cleanly through bone; sharpen and hone knives on a steel and whetstone; portion steaks, chops and cutlets to the ordered weights; stuff and link fresh sausages with casings. What we are looking for: • Physically fit to lift carcasses and stand all day • Knowledge of halal slaughter and handling where required 3+ years on the tools preferred. Overtime paid at a premium rate. Six days a week, one day off. Walk-in interviews this week.
