Day-to-day duties: • Laminate puff and croissant dough by folding in the butter • Weigh and mix flour, yeast, water and salt to the day's recipe • Prove dough in the proofer at the right temperature and humidity • Monitor oven temperature and baking time for each batch • Load and unload the deck oven with a peel What we are looking for: • Accurate at weighing and following recipes • Familiar with deck, rack and convection ovens Freshers welcome — about 6 years of practice is enough.
