You should have: • Quick and accurate on the weighing scales and order maths • Able to identify primal cuts of beef, mutton and poultry You will take customer orders and advise on cuts and cooking; monitor chiller and freezer temperatures to keep the cold chain; mince meat and prepare keema on the grinder; trim fat, sinew and silver skin off the cuts.
