You should have: • Physically fit to lift carcasses and stand all day • Confident knife skills and safe blade handling The role involves run the band saw to cut cleanly through bone; keep HACCP hygiene records and sanitise the block and tools; break down beef, mutton and chicken carcasses into primal cuts; trim fat, sinew and silver skin off the cuts.
