Day to day you will weigh and mix flour, yeast, water and salt to the day's recipe; keep work surfaces and equipment clean to food-safety standards; pipe and fill cakes, pastries and cream rolls; load and unload the deck oven with a peel; laminate puff and croissant dough by folding in the butter.
