Ideal candidate: • Able to identify primal cuts of beef, mutton and poultry • Food hygiene / HACCP certificate The role involves debone shoulders, legs and loins with a boning knife; break down beef, mutton and chicken carcasses into primal cuts; take customer orders and advise on cuts and cooking; run the band saw to cut cleanly through bone; keep halal cuts separated and clearly handled; season and marinate meat on request.
