Immediate opening: we are hiring a counter butcher in Jasper County, Illinois. You will be based in a hotel or restaurant butchery. On the job you will handle: • Trim fat, sinew and silver skin off the cuts • Run the band saw to cut cleanly through bone • Sharpen and hone knives on a steel and whetstone • Keep HACCP hygiene records and sanitise the block and tools Ideal candidate: • Physically fit to lift carcasses and stand all day • Clean, presentable and friendly at the counter Full-time with occasional weekends.
